Sea World started with a small store in Sokcho Jungang Market in 2009 to produce Bugak, a traditional Korean food, and has grown into a small business that exports it to the world through joint production with domestic smart factories and Vietnamese corporate factories. Sales in 2021 were approximately 10 billion won, a high growth rate of 145% compared to 2020. We are strengthening our food manufacturing and technology development capabilities by expanding our raw material processing know-how, which began with Bugak manufacturing, to include healthy root vegetables, seaweed, and marine products preferred by modern people. Currently, it has entered into large supermarkets, super chains, and online channels in over 10 countries, including the United States and China.
A company official said, “Our company’s ‘Ti-Gak Taekak’ bugak is equipped with the largest number of items and the largest production system in Korea that can stably supply exports and large distribution channels, breaking away from the limitations of the existing traditional production method, HACCP, FSSC22000, ISO14001, HALAL “It is produced according to global standards,” he said. “By minimizing the amount of residual oil through specialized production process technology and technological development, it is light and non-irritating, and the taste and crispy texture of the raw materials can be maintained for a long time.”
‘Protein Salmon Chip’, the main exhibit at this exhibition, was selected for the 2023 SEOUL FOOD AWARDS. It is a product that meets the purpose of ESG, planned in collaboration with Dongwon Industries to upcycle a large amount of salmon skin, which is discarded more than 5 tons per month, into edible food. Discarded salmon skin is provided by Dongwon Industries, and Sea World produces products using floating manufacturing technology. In 2022, the company applied for a patent (application number 10-2022-0131264) for ‘Snack using salmon skin and its manufacturing method’ through a recipe completed after about 10 months of collaboration.
In the case of salmon skin, it was difficult to obtain satisfactory results in the initial development stage because it is oily and has a strong unique fishy smell. However, through the use of deep sea water, a unique cleaning method, and a starch coating recipe developed to suit the raw materials, it is crispy but not fishy and has nutritious properties. is evaluated as a well-made product. It will be launched in September 2022, and the product has been launched in domestic large supermarkets since April of this year, and exports to the United States and China are also scheduled.
An official said, “Salmon chips, which have already established themselves as a healthy snack in countries with advanced fisheries overseas, were limited to imported products in the domestic snack market. Accordingly, our company has developed a more popular taste that suits the tastes of Koreans through domestic processing and production using salmon skin using traditional Bukkak production technology accumulated over many years,” he said. “We aim to continuously expand the market and increase consumption with healthy snacks,” he explained.
He continued, “Protein salmon chips not only have value as a K-snack using traditional ingredients, but are also meaningful as a small but upcycling snack that approaches the marine circular economy with the rich nutrition of salmon skin. “By processing salmon skin into snacks, we have developed a product that can meet the demand of consumers looking for healthy protein snacks while ensuring sustainability in the use of fishery by-products,” he added.
Protein Salmon Chips and Cafe Chips introduced through this exhibition are products designed to target not only domestic distribution but also the global market.
